Aristotle claimed, in his "History of Animals", the curative properties of propolis in the cases of skin infections as remarkable. Egyptian priests were already aware of this, but the Greeks and the Romans were the first curious enough to ask about its medicinal properties, as they had already used it repeatedly. Therefore it is said that this created a great discussion between Virgil, Varro, Pliny and Dioscorides who had different opinions on the origin of propolis.
Propolis is much more than the plant resins from which it comes, thanks to the bees contribution in its collection. Its modifications are already made in the bee hive, in any case it is impossible to produce propolis artificially.
It is know that several civilizations throughout the centuries have used propolis because of its antibiotic properties, a quality that Aristotle intuitively sensed in his works. It was used by the Incas, the Georgians in the thirteenth century, for dental operations taking advantage of its healing and anesthetic qualities, and in medieval France, where it was used as a common remedy for all sores. More recently it was used by the masses during the Boer War, as a disinfectant and a skin healer, simply mixing it with Vaseline and calling it "vasogenic propolis, which was at a later date used in World War II by the Soviet doctors.
Its use in the West disappeared for some time, only to return years later with
the investigations of Remy Chauvin in 1965-66 that highlighted its bactericidal and fungicidal value.
AROMA, COLOR, FLAVOR.
Honeys are different from one another because they come from different plant species. Single flowered honeys or monofloral (rosemary, orange blossom, etc) come from the plant species that gives them their name. Its flavor, color and aroma are characteristic of the plant that they come from, and so are their qualities. "Millefiori" or Polyfloral honey has various floral origins and is usually associated with the geographical area where these particular flowers are found.
Honeydew honey comes from sugared secretions from plants and trees.
For example: Oak honeydew honey.
Although there are different types of honey, their basic composition does not vary much from one to another.
Water: Generally between 17 and 18%, which is the amount considered best for storage.
Sugars: glucose 38% fructose 31%.
The sucrose content is about 1.3% ± 7.3% maltose. Displayed in smaller amounts we also find Isomaltose and Niger. We can also find Erlosa and Raffinose in very small amounts.
Organic acids: give honey an acid pH ranging between 3.5% and 5.5%.
Butyric, Gluconic, Malic, Citric, Oxalic, Lactic and Formic acid are present as well in its composition.
Enzymes: Invertase and Amylase protect against digestive disorders, promote the assimilation of sugars and the digestibility of other foods. Other enzymes that we find in honey are Sucrose, Glucosidase, Catalase and Phosphatase acid.
Proteins: Its value is around 1% protein mainly because it contains almost all essential amino acids which are found in Tryptophan and Arginine.
Minerals: It holds an amount of1.5% minerals. Including Potassium salt, Iron, Calcium, Phosphorus, Sulfur, Chlorine, Sodium, Magnesium and Copper. Normally dark honey is richer in minerals than white honey.
Vitamins: There are small amounts of soluble vitamins B and C, one can also find fat-soluble vitamins A, D, E and K
Other elements: It contains Tannin, Dextrin, Yeast, Peroxidase (known as an antibacterial substance), waxy pigments and aromatic substances, including other elements.
The highest quality propolis is collected in summertime. That is when the highest concentration of active ingredients is obtained. The amount of propolis collected varies between 100 and 200 g per hive per year.
